Cori’s Salad Secret

My Mom, Cori was famous for her salad. Nothing fancy, just a week night simple green salad tossed with oil and vinegar. Although she loved fancier salads, too, this was an evening ritual. It’s one of the first things I assisted her with in the kitchen. She never used a recipe, just tossed, tasted and adjusted.

I thought everyone made salad this way. It wasn’t until I had dinner at a friend’s house did I realize salad dressing came in a bottle.

CORI’S GREEN SALAD

One head green leaf or red leaf lettuce, washed, dried and loosely torn ( about 6 cups)

1 clove garlic, peeled

1/4 cup red onion, coarsely chopped

1/4 to 1/2 teaspoon kosher salt

1/2 teaspoon dried oregano

1/4 cup olive oil ( not extra virgin)

2 tablespoons balsamic vinegar

  1. Using a paring knife, cut a slice of the garlic clove. Rub the cut side of the clove onto the salad serving bowl. Continue to slice and rub until the clove is done.

  2. Place lettuce and onions in the garlic rubbed bowl. Sprinkle with salt and oregano. Pour oil over green first, then vinegar. Toss and taste! Adjust salt or vinegar as desired.
