What’s better than a birthday cookie? A chocolate birthday cookie ! I know cake gets all the attention for most celebrations, as it should, but for the cookie lovers this sprinkle speckled cookie is a great way to celebrate.
Plus , you can make them in any size large or small. And use any custom sprinkle colors you like. Don’t be afraid to slightly underbake. This gives the cookie the best combination of chew and crisp.
Chocolate Birthday Cookies
CHOCOLATE BIRTHDAY COOKIES
MAKES 40
1/2 pound butter, softened
1 1/2 cups sugar
1 teaspoon vanilla
3 egg yolks
2 cups flour
1/2 cup cocoa
1 teaspoon baking soda
1/2 teaspoon cream of tartar
1 cup assorted sprinkles
Preheat oven to 350 F.
In the bowl of a stand mixer, (or with a hand mixer) cream butter and sugar until light. Add vanilla and egg yolks, one at a time, mixing well after adding each one.
On low speed, add flour, cocoa, baking soda and cream of tartar. Mix just until blended.
Stir in sprinkles.
Roll dough into 1-inch balls. Place onto a parchment lined cookie sheet, spacing 2-inches apart. Lightly press tops.
Bake 10 to 12 minutes or until just about firm. Cool and store cookies at room temperature in an airtight container.
